Open Menu → Extensions, select the extension and inspect Permissions or Details. Optional permissions can sometimes be turned off separately. Private-browsing access is a separate decision.

If its behavior changes, a page breaks or the publisher stops maintaining it, disable or remove it. Removing an extension does not necessarily reverse changes it already made to a website account.
