DNS turns a domain such as example.com into an address. DNS over HTTPS encrypts that lookup on its way to a chosen resolver, reducing visibility to some local network observers. The resolver itself can see the looked-up domain.
The reviewed Android source includes Mozilla/Cloudflare and NextDNS resolver URLs. Your installed selection may differ. Open Settings → Privacy and security → DNS over HTTPS to see the active protection level and provider.
DoH does not hide your IP address from websites, encrypt an HTTP page, or erase searches from your search provider. Some work, school, parental-control or captive networks may require a different DNS setting.
Depending on the build, you may see default, increased, maximum or off-like choices. Stronger settings can avoid fallback to unencrypted DNS but can also break captive portals or private network names. Read the description on the actual settings screen.
A custom resolver becomes a party that can receive domain lookups. Verify its HTTPS URL and privacy policy before entering it. Changing DNS does not change your search engine.
